Description
Paul Cluver Estate Pinot Noir is a single-variety Pinot Noir red wine produced by the Paul Cluver winery in the Western Cape South Coast denomination, South Africa.
The grapes used to make Paul Cluver Estate Pinot Noir come exclusively from Burgundy clones. The berries are thoroughly selected individually before being crushed and then undergoing a cold maceration of approximately 8 days.
The musts ferment spontaneously. Some tanks are inoculated with selected strains of Burgundian yeast.
